Preparation Peel the potatoes and carrots and cut them into pieces. Cut the ends off the green beans and cut into pieces. Boil the vegetables starting with the beans as they take longer. After 15 minutes add the other vegetables and boil for another 15 minutes then drain.
Prepare the sauce. Add the lemon juice, sugar, vinegar, salt and pepper to the mayonnaise and blend well. Add the sauce to the vegetables and mix delicately. Dice the parsley finely and stir in. As soon as the vegetables are cool, put your salad into the refrigerator for at least an hour before serving. The Chef's tips If you like you can add a touch of mustard to add a kick to your salad.
