Preparation Make a dough, mixing the egg yolks with the flour and the sugar, a pinch of slat and the milk. Knead the dough until it is smooth.

Whisk the egg whites until they are smooth and firm and then add then delicately to the dough. Heat the oil in a pan, add the dough and let it fry for a few minutes. Add the raisins and using a fork break the dough into small pieces and let it brown.

Take the pan off the fire, sprinkle it with icing sugar and serve either hot or cold with rasberry syrup or red current jam.
